At Botanica Restaurant, Voco offers a local experience. Chef Bas Hoog is guided by the principles of "Dutch Cuisine". He strives to use local and seasonal produce as much as possible and prides himself on the prominent role vegetables play in the culinary repertoire. You can enjoy beautifully roasted leeks with chive oil, raw mushrooms and sourdough crunch, garnished with East Indian cherry and leek powder. You can also taste gently cooked mackerel with buttermilk sauce, finished with lovage and horseradish, an illustration of a balanced composition with proper cuisson.
